Ecuadorian café coming to East Stroudsburg

A little bit of Ecuador is coming to the Poconos. A grand opening is planned for June 10 at the new BlueFoot’s in East Stroudsburg. 

The BYOB café is owned by Victor and Monica Castro. 

The couple met in 1984 on a flight to the Galapagos islands. Victor is a native to the islands and Monica was a native Ecuadorian living in the U.S.,   

The cafe features the cuisine of Monica Castro’s home country of Ecuador such as Esmeraldas encocado, a coastal dish cooked with fish and shrimp seasoned with citrus, spices, onions, peppers and coconut milk. 

With BlueFoot Cuisine, the couple said they hope to create a warm and welcoming atmosphere like the one they left behind on the islands. 

“Celebrate with us and try our authentic Ecuadorian cuisine! Love is the main ingredient in every dish – come indulge in the flavors of Ecuador today,” said Monca Castro. 

The café is located at 266 River Rd, East Stroudsburg. 

The Pocono Chamber of Commerce will be celebrating BlueFoot’s grand opening June 10 from 11:30 am to 12:30 pm with a ribbon-cutting ceremony at noon.
